- Preheat oven to 425°F.
- In large bowl, toss together sausages, peppers, cherry tomatoes, onion and garlic.
- In small bowl, stir together olive oil, sage, tomato paste, salt, and pepper; toss with sausage mixture until well coated. Transfer to parchment paper–lined baking sheet in even layer.
- Roast for 15 to 18 minutes or until onion and peppers are tender and sausage is heated through. Sprinkle with chopped parsley (if using).
Tip: Serve on a bed of rice or toss with pasta – or serve simply with warm pita bread.
