3 bell peppers (yellow, green and red), cut into thick slices
2 cups cherry tomatoes
1 red onion, chopped
2 tbsp minced garlic
2 tbsp olive oil
1 tbsp chopped fresh sage
2 tsp tomato paste
1/2 tsp salt
1/4 tsp pepper
2 tbsp chopped fresh parsley (optional)
Directions
Preheat oven to 425°F.
In large bowl, toss together sausages, peppers, cherry tomatoes, onion and garlic.
In small bowl, stir together olive oil, sage, tomato paste, salt, and pepper; toss with sausage mixture until well coated. Transfer to parchment paper–lined baking sheet in even layer.
Roast for 15 to 18 minutes or until onion and peppers are tender and sausage is heated through. Sprinkle with chopped parsley (if using).
Tip: Serve on a bed of rice or toss with pasta – or serve simply with warm pita bread.
