Baked Ziti Pasta with Italian Chicken Sausage, Mushroom and Kale

Loaded with sausage, cheese and veggies, this hearty pasta is pure comfort food.

Ingredients
  • 5 Zabiha Halal Fully-Cooked Classic Italian Chicken Sausages, sliced
  • 2 tbsp olive oil
  • 6 cups sliced mushrooms
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups shredded kale leaves
  • 4 cups tomato sauce
  • 1 lb ziti pasta, cooked according to package instructions
  • 3 cups shredded mozzarella cheese, divided
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup torn fresh basil
Directions
  1. Preheat oven to 425°F.
  2. Heat olive oil in large skillet set over medium heat; cook sausages, mushrooms, onion and garlic, stirring occasionally, for 5 to 8 minutes or until mushrooms and onion are tender. Add kale; cook for 2 to 3 minutes or until slightly wilted.
  3. Add tomato sauce; cook for 3 to 5 minutes or until heated through. Toss mixture with cooked pasta and 2 cups shredded mozzarella. Transfer to greased 13- x 9-inch baking dish. Top with remaining mozzarella and Parmesan.
  4. Bake for 15 to 20 minutes or until cheese is golden and bubbling. Sprinkle basil over top.

Tip: Pair this dish with a delicious leafy green salad or sliced tomatoes with a drizzle of olive oil.
