Zainab’s Lebanese Sausage Bake

During the month of Ramadan, one of my favorite iftar dishes is Lebanese Sausage Bake, or “Makanek” in Arabic. There is very little prep work to do so not only is it perfect for those busy Ramadan evenings, but for any time of the year! It’s also quite filling (and healthy) so it will help keep you full throughout the day!

Ingredients
  • 1 pack of Zabiha Halal Classic Italian Sausages
  • ½ Sliced Red & ½ Green pepper
  • ½ Sliced onion
  • 1 Quartered tomato
  • 1 Potato cut into wedges
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1/4 cup pomegranate molasses
  • Salt & cracked pepper
  • Drizzle of olive oil
Directions

1. Combine these ingredients (except pomegranate molasses) into an oven dish, drizzle with olive oil and bake for 30 min in the oven (while covering the dish).

2. After 30 min, remove the cover & drizzle with pomegranate then put the dish back into the oven for another 30 min.

3. Once cooked, serve with pita bread, hummus or garlic sauce and enjoy!
