- 1 large head romaine lettuce
- 1 large red bell pepper, chopped
- 1 cup chopped hothouse cucumbers
- 1 large carrot, peeled into ribbons
- Handful grape tomatoes, halved
- Handful putted olives
- Feta cheese, crumbled to taste
- Balsamic vinaigrette
- Olive oil
- Wash lettuce and cut into large, bite-sized pieces.
- Chop pepper, cucumber, and carrots into small pieces.
- Combine all ingredients in a bowl, toss well.
- Drizzle with balsamic vinaigrette and oil, toss again.
- Finish with pepper and more balsamic or oil, to taste.
